Sour dough loaves


Makes 2 loaves

Mix 
1 1/2 cups water
2 cups active starter
3 tsp sugar
2 tbsp melted butter

Then add
3 tsp salt
5 1/2 cups flour

Knead in a Bosch for 8-10 minutes

Split and roll into logs. Place the logs into 2 greased pans.  Let rise for 8 hours covered

Bake at 400 for 30-32 minutes

Chicken peanut wraps


Chicken peanut wraps

For the wraps:

Cook 2 chicken breasts and slice into small pieces
3-4 cups coleslaw
1/3 cup peanut pieces
1/4 cup chopped cilantro 
6-8 tortillas

Mix with peanut sauce right before serving

Peanut sauce recipe: 
1/4 cup olive oil
1/4 cup honey
1/4 cup peanut butter
2 tbsp rice vinegar
1 tbsp soy sauce
1 tsp sesame oil
1/2 tsp salt and pepper
1/2 tsp red pepper flakes
2 tsp ground ginger

Stuffed peppers


Stuffed peppers

Cool the following in a frying pan:
1-2 pounds ground Turkey or beef
1 onion diced
1 tsp oregano
1 tsp basil
1 tsp each salt and pepper
1 can diced tomatoes

Combine cooked ingredients with
1 cup cooked rice
1/4 cups parmesan cheese

Sprinkle with shredded cheese

Bake at 350 for 30 minutes 








Barbacoa


Beef barbacoa

Place a roast in the slow cooker. 

Add:
1/2 cup beef broth
1 tsp salt
1 tbsp chili powder
1 tsp garlic powder
1 tsp onion powder
1 tsp cumin
1 tsp paprika
1 tsp black pepper
1 squeezed lime or 3 tbsp lime juice 
1 tbsp cilantro
1 can green chili’s 

Cook on normal for 4 hours then keep warm til dinner. 




Dill pickle bread


Dill pickle bread

Mix together:
1 cup sour cream 
1 cup canola oil
4 eggs
2 tbsp sugar
2 tbsp pickle juice
3 1/2 cups flour
2 1/2 tsp baking powder
1 tsp salt
1 cup shredded cheese
1 cup chopped pickles
4 tsp dill

Bake at 350 for 45 minutes in a load or 25 minutes in a muffin tin. 


Croutons


Cube 5 slices of bread

In a frying pan combine:
5 tbsp butter
2 cloves minced garlic
1 tsp oregano
1 tsp thyme
5 tbsp olive oil

Add the bread to the pan and cook until the desired level of done. 


Canned jalapeños


Canned jalapeños 
6-8 jalapeños sliced thin seeds in

Bring to a boil:
5 cups white vinegar
1 1/4 cups water
4 tsp pickling salt
2 tbsp sugar
2 cloves crushed garlic

Fill the jars 3/4 of the way with jalapeños then add the mixture to the jars to cover the jalapeños.  

Seal in jars and boil in a hot water bath for 10 minutes so the jars seal. 


Gnocchi

Gnocchi 

Mix together:
2 eggs
1 cup mashed potatoes
1 tsp salt
1 cup ricotta
2 tbsp softened butter
3 cups flour

Knead the dough on a floured surface.  Separate the dough into 8 balls. Roll each ball into a thick rope then slice into small pieces. 

Put the pieces in a pot of boiling water.  When they float grab them out with a slotted spoon.  

Serve with your favorite pasta sauce.  



Ranch pumpkin seeds

Ranch pumpkin seeds 

Mix together
1 tsp olive oil
1/2 tsp sea salt
1/4 tsp onion powder
1/4 tsp parsley 
1/4 tsp dill
1/4 tsp garlic powder
1/8 tsp celery seed
1/8 tsp paprika
1/8 tsp pepper

Bake at 300 for 30 min






Brownie roll out cookies


Brownie Roll Out Cookies

3 cups flour
1/2 tsp salt
1/2 tsp baking powder
1 cup butter softened 
1 1/2 cups sugar
2 large eggs 
2/3 cups cocoa

Mix together.  Roll out on a floured counter and cut like sugar cookies. Cut into 1/4 inch cookies.  Bake at 350 for 8 minutes. 


Alfahores con Manjar



Set the oven to 340

In a bowl combine the following:
1 cup flour
1 cup cornstarch
1 tsp baking soda
1/2 cup icing sugar
1 cup cubed butter
1 egg

Combine and refrigerate for 30-60 minutes. 

Roll out the dough and cut like sugar cookies.  

Bake for 8 minutes.  They should remain white. 

Spread dulche de leche in between the cookies when they are cool and serve.  






Shanghai noodles


Shanghai noodles:

Cool frozen stir fry vegetables and shrimp in a wok or deep frying pan.  

Make the following sauce in a shaker:

1 tsp corn starch
1 tbsp light soy sauce
2 tbsp dark soy sauce
1 tbsp rice vinegar
2 tbsp honey (opp)
1 tbsp sesame oil (opp)

Boil udon noodles in a big pot.  Once the noodles are cooked add them to the wok and pour the sauce on top.  Mix it all together and serve.

Pumpkin pie

Homemade Pumpkin pie

Mix filling in bowl:

2 cups puréed pumpkin
3 1/2 tsp cinnamon
1/2 tsp cloves
1/2 tsp all spice
1/2 tsp nutmeg
3 large eggs
I cup whipping cream
1 tsp vanilla extract
3/4 cup brown sugar

Make pie crust in a food processor then refrigerate at least 15 min.  

1 1/4 cups flour
1/2 tsp salt
1 tbsp sugar
1/2 cup cold salted butter cut in small cubes
1/4 cup cold water

Roll out crust and put filling inside. 

Bake at 425 for 15 min then lower the temperature to 350 and bake 55 min with the pie covered with tinfoil so the crust doesn’t get to brown.  Refrigerate until it’s time to serve.

Mix together:
1/2 cup butter
1 cup brown sugar
3/4 cups white sugar
1 1/2 cups PB
2 eggs
1 1/2 cups flour
2 tsp baking soda
1 1/2 cups oats

Bake at 350 for 8-10 minutes.  Makes 3 dozen

Cranberry Muffins

Cranberry muffins

Mix together:
4 eggs
1/3 cup melted butter
2 1/2 cups homemade cranberry sauce 
3 tbsp lemon juice
1 cup milk
1 cup water
2 tbsp baking powder

4 cups flour
1 1/2 cups sugar

Bake at 350 for 22 min for regular muffins

Salsa

15 lbs of tomatoes = 10 quarts =40 cups
6 green peppers
12 jalapeños (leave at least 1/2 the seeds in)
8 medium sized onions
2 bunches of cilantro (3 cups)
The juice of 2 limes

I put all the above ingredients in the food processor and blended them.

Cook on medium heat for 30 min with:
1 1/2 cups vinegar
2 tbsp cumin
4 tbsp garlic powder
1 tbsp salt
1 cup sugar

Place jars in canner for 25 minutes. 

Makes 10 1 L jars

I used a slotted spoon to drain off the fluid when filling the jars.

Mix together:
5 cups flour
3/4 cup cocoa powder
4 tsp baking powder
3 tsp baking soda
1 tsp salt
1 cup canola oil
2 1/2 cups sugar
4 eggs
8 cups shredded zucchini
1 cup milk
1 cup chocolate chips 

Bake at 350 for 30 min for large muffins.  22 min for regular sized muffins and 55 min for bread.

Baked cake donuts


Baked Cake Donuts with a Chocolate Glaze

In a bowl mix:
2 cups flour
3/4 cups white sugar 
2 tsp baking powder
1/2 tsp nutmeg
1/2 tsp salt
3/4 cup milk
3/4 tbsp vinegar
2 eggs
2 tbsp melted butter

Bake at 425 for 7-9 minutes. 

 Make sure to spray your donut pan between each batch.  

Fill donut pan 2/3 full. 

This recipe makes 12 donuts.  

Don’t glaze the donuts until they are cool. 

Chocolate Glaze:
1/2 cup semi-sweet chocolate chips
2 tbsp butter
2 tbsp corn syrup
2 tbsp water


Pour all ingredients in a microwave safe bowl.  Microwave 30 seconds then stir.  Microwave another 30 seconds and stir until mixed.  I used a spoon to pour and spread the glaze on the donuts.

Ranch Honey Chicken Sheet Pan


Ranch Honey Chicken Sheet Pan

2 tbsp of honey
1 powdered ranch pkg
2 tbsp Worcestershire sauce
5 tbsp olive oil 
1 tsp salt
1 tsp pepper
4 chicken breasts or pork chops
6-8 cubed potatoes
12 oz green beans or broccoli 

Preheat oven to 475

Whisk honey, Worcestershire, 2 tbsp oil, 2 tbsp ranch, 1/2 tsp salt and 1/2 tsp pepper together.  Spread this on your chicken and place in a 9x13 pan. 

Combine potatoes, 2 tbsp olive oil, 1 tbsp ranch, 1/2 tsp salt. Put around the edges of your pan.  

Bake for 15 min then add your veggies coated in:

1 tbsp ranch and 1 tbsp olive oil. 

Bake for another 8 minutes.

Lemon poppy seed cake

Lemon poppy seed cake

Bake in 3 greased 6 inch pans or make as a sheet cake in a 9 by 13 pan.  If you take this option 1/2 the icing.



Cake:
Mix together 
4 eggs
1 3/4 cups sugar
1 cup canola oil
2 tbsp vanilla
2 tbsp lemon juice
1 tbsp vinegar
1 cup milk
1 tbsp baking powder
2 tbsp poppy seeds
3/4 tsp salt
3 cups flour

Bake at 350 for 25 min if doing the 3 6 inch pans bake for 50 min for the sheet cake. 

Icing:
1/2 cup softened butter
1/2 cup cream cheese
2 tbsp milk
3 1/2 cups icing sugar

You can garnish this cake with poppy seeds as well.

Chili pie




Chili Pie

1 lb ground beef
1 medium onion chopped or 1 tbsp onion powder
1 can diced tomatoes
1 can kidney beans
1 can corn
1 tbsp chili powder
1/2 tsp salt
1 tsp cumin
1 cup cornmeal
2 eggs
1 cup milk
1 cup shredded cheese (optional)

Cook meat and spices on medium heat.  Add the tomatoes, kidney beans, corn and cook over medium heat for 15 minutes.

Sprinkle corn meal on top.  

Mix eggs and milk together then pour over top.  

Sprinkle with cheese if you would like.  

Bake at 350 for 45 minutes.

Smoked chicken

Smoked Chicken

This chicken will take you 5 hours to make from when you turn on your smoker until it is done. 

Preheat your smoker to 225 F

Rub the chicken in olive oil on top of the skin and under the skin.


Rub this homemade rub on your chicken:
1/4 cup brown sugar
1 tbsp coarse salt
2 tsp paprika
2 tsp pepper
2 tsp onion powder
3 tsp garlic powder
1/2 tsp cayenne pepper (optional)

Smoke for 3 hours at 225 F in a roasting pan with 400 ml of chicken broth in the bottom.  

Every 45 minutes I added more wood chips and basted the chicken.

Meat loaf and potatoes


Instant Pot Meat Loaf & Potatoes

Meat loaf:
Mix:
1 lb ground beef
1 tsp garlic powder or 1 clove crushed garlic
2 tsp onion powder or 1/4 cup chopped onion
2 tsp worchestershire sauce
2 tsp Montréal chicken seasoning or seasoning of choice
1/3 cup milk
1 egg
1 slice bread torn into small pieces

Mix and form into a ball.  Place in a tin foil boat. 

Mix sauce and pour on top of the meat loaf. 

Sauce:
1/2 cup ketchup
1 tbsp mustard
1/4 cup brown sugar

Cut 6-8 potatoes into bite sized pieces and put in the bottom of the instant pot.  Add 2 cups beef broth.  

Place meat loaf boat on top of the potatoes on the instant pot stand (if you have one). 

Push pressure cook and cook for 25 minutes.  Remember your instant pot will take about 20 minutes to get to the proper pressure. When it is done hit quick release to let out the steam.

Strawberry jam

Homemade Strawberry Jam


9 cups strawberries diced

2 pkgs certo (gelatin)

14 cups sugar or sweetener


Bring strawberries and certo to a boil on high heat in a heavy bottomed pan. Once boiling add the sugar or sweetener and bring to a boil again.  Boil for 1 minute then pull off the heat.   Stir for 5 min and remove foam from the top.  


Put jam into warm canning jars.  


I warm mine in the oven set to 200


Put lids for the cans in a small pot on a simmer.  


Once the jam is in the jars put the warm lids on.  You do not need to process this jam in a canner on a rolling boil but I like to process it for 15 minutes.  Let the jars sit on the counter to seal for 24 hours.

Tumeric rice




Tumeric rice

1 1/2 cups basmati rice
3 cups water
1/2 tsp tumeric
1/2 tsp salt

Soak in pot 30 minutes before turning the burner to high.  Cook on high stirring frequently until it boils then cover and simmer on low for 15 minutes.  

This rice is so, so good with curry.

In the crockpot place the following ingredients on low for 6 hours:

2 chicken breasts or 6 chicken thighs
6 tbsp finely chopped red onion or 2 tbsp onion powder
2 tsp garlic powder or 2 crushed cloves
2 tsp ground ginger
3 dried red chili’s 
1 medium tomato chopped or 1/2 cup diced canned tomato
1/2 tsp cumin
1/2 tsp coriander
1/2 tsp tumeric
1/4 tsp chili powder
1/2 tsp salt
1 cup coconut milk

This is amazing on tumeric rice.

Carrot oatmeal muffins


I have had this recipe for years and never used it.  The kids made it today and loved it!  
3 cups flour
2 cups oats
1 cup brown sugar
2 tbsp baking powder
1 tsp cinnamon
1/2 tsp salt
2 cups milk
1 tsp vanilla 
2 shredded carrots

Can replace shredded carrot with 2 apples pealed and grated or 1 cup raisins.

Bake at 350 for 15 min for mini muffins and 25 for regular sized.

Cilantro lime dressing


Mix in food processor:
1 cup mayo
1/2 cup loose packed cilantro
2 slices of jalapeño optional
2 tbsp lime juice
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt
1/2 tsp pepper
1/2 tsp dried dill
6 tbsp milk

Store in fridge stays good for 3-5 days

Rhubarb Crisp


Preheat the oven to 375
Spray a 9x9 pan

Filling:
4 cups rhubarb chopped
3/4 cup white sugar
2 tsp cinnamon
1/4 cup flour

Mix and pour in the bottom of the pan

Topping:
1/2 cup melted butter
1 cup flour
1/2 cup rolled oats
3/4 cup brown sugar

Bake at 375 for 30 min

Rhubarb sweet rolls


Make filling and dough at the same time.  Refrigerate filling while the dough is rising. 

Dough:
1/2 cup warm water
1 tbsp yeast
2 tbsp sugar
Allow to sit 10 min then add:
1 cup sweetened condensed milk
1 egg
1/4 cup vegetable oil
1 tsp salt
3 1/2 cups flour

Mix for 5 min then allow to rise 1 hour.

Filling:
4 cups rhubarb
3/4 cups sugar
1 tbsp lemon juice 

Bring to a boil on medium heat then strain and refrigerate.  After the dough has risen roll out and spread topping on top.  Roll tight like a cinnamon bun then slice into 12 pieces.  Place in a greased 9 by 13 pan. 

Bake at 350 for 25 min

You can serve this with a glaze but we like them plain.

1 2/3 cup HOT water

Mix by hand form 12 balls roll and cook in an oiled frying pan on medium heat.  Flip every 30 seconds.

Smoked sausage


For this recipe we used:
5 lbs ground venison
5 lbs ground pork

I seasoned the meat with the backwoods original seasoning.  I order it from amazon. The casings I use I get at cabela’s and 1 pkg makes 25 lbs of sausage.  I used my cabela’s heavy duty grinder and stuffer to make the sausage. These were made in 32 mm casings.  I preheated our smoker to 225 and smoked these hanging for 3 hours.  It would be smart to check them at 2 1/2.  The internal temperature needs to be 165.




Easter Lily


Easter Lily’s are a family Easter tradition on Jeff’s side of the family and we have made them all 17 of our Easter’s together.  

Make lemon pie filling following the directions on the box. 

Then make the shells:
Mix 1 cup sugar
3 eggs
2 tbsp milk
1 cup flour
1 tsp lemon extract
1 1/2tsp baking powder
1/2 tsp salt

Mix and pour on a greased cookie sheet.  One batch makes 12 Lily’s.  Bake for 8-10 min until golden brown at 350.  While warm form into a lily shape.  

Serve with lemon pie filling and whipped cream or cool whip on top.

Donut muffins

1 1/2 cups white sugar
2 tsp vanilla
2 eggs
4 tsp baking powder
1/2 tsp salt
1/2 tsp nutmeg
1/2 cup canola oil
1 1/2 cups milk
3 cups flour
  
Bake at 350 for 18-22 min

Makes 18 regular muffins




When you bring them out of the oven brush on melted butter and sprinkle with sugar.

Chewy granola bars




1/2 cup butter
1 cup brown sugar
1/4 cup white sugar 
2 tbsp honey
1/2 tsp vanilla
1 egg
1 cup flour or whey powder
1 tsp cinnamon
1/2 tsp baking powder
1/4 tsp salt
1 1/2 cup oats
1 1/4 cup Rice Krispies
1 cup chopped nuts
1 cup raisins
(Can replace nuts or raisins with coconut or dried fruit)
1 cup chocolate chips

Press into a greased 9 by 13 pan

Bake at 350 for 30 min until golden brown

Thai chicken peanut curry satay


2 chicken breasts
I can 400 ml coconut milk
1 can chickpeas
1/2 cup peanut butter
3 tbsp lime juice
1 tbsp ginger
2 tbsp soy sauce
3 tbsp honey
1 tbsp sesame oil
2 tsp garlic powder
2 tsp curry powder
1 tsp cumin
1 tsp Garam masala
1/2 tsp red pepper flakes

Can make freezer meals with this recipe   

Cook in crockpot on low for 6 hours.   Serve on rice with naan.   Could serve in burrito bowls or lettuce wraps as well.

Sugar cookies



Mix together:
1 cup butter softened 
1 cup white sugar
1 egg
1/2 tsp vanilla
1 tsp almond extract
3 cups flour
1 1/2 tsp baking powder
2 tbsp milk or cream

Mix dough then let cool in the fridge for 10 min before rolling. 

For icing mix together:
3 cups icing sugar
6 tbsp milk
2 tbsp corn syrup
1/2 tsp vanilla
2 drops food coloring

Roll cookies out to 1/2 inch thick and bake at 350 for 7-8 min. Recipe makes 18 cookies.

Belgium waffles




4 1/2 cups flour
2 tbsp baking powder
6 tbsp sugar
1/2 tsp salt
2 tsp cinnamon
4 eggs separated.  Whip whites to peaks then fold in to the rest of the ingredients. 
1 cup canola oil
2 cups milk
2 cups water
2 tsp vanilla extract

Molasses Bread


2 1/2 cups warm water
3 cups whole wheat flour
3-4 cups white flour
1 1/2 tbsp yeast 
1/3 cup molasses
2 tbsp cocoa powder
3 tbsp oil
1/3 cup honey
2 tsp salt
3 tbsp butter (melted)
Can brush with butter and sprinkle oats on top on the last few min of cooking. 

Bake at 375 for 20-25 min

This bread is amazing easily my favorite bread I have ever made.

3 cheese Chicken penne pasta bake


Boil
750 grams penne or rotini pasta
Near the end of the boil add 2 cups cut up spinach

In a pan or on a grill cook 2 chicken breasts I season them with garlic and salt.

Pasta sauce:
680 grams sauce or crushed tomatoes
1 tbsp basil
1 tbsp oregano
1 tbsp garlic powder
1 tbsp onion powder
1 tsp chili powder

You can also use whatever sauce you have on hand.  If I’m not using left over sauce I just mix the ingredients and don’t even precook the sauce.  

Drain the pasta/spinach mixture then pour the sauce in the pot.  Add 1/2 cup cream cheese then stir in pasta and chicken.   Put in an 9x13 pan and sprinkle with parmasean and mozzarella cheese.  


Bake at 375 for 20 min


Oatmeal pancakes

These pancakes are diabetes friendly.  Pancakes have been my kryptonite recently and these ones didn’t peak my numbers. 

First warm:
1 1/2 cups water
1 1/2 cups milk 
For 3 min in the microwave then add:
2 cups quick oatmeal to the mixture and allow to sit. 

Mix:
6 eggs
2 tsp vanilla
1/4 cup melted butter

Then add oat mixture and:
6 tbsp brown sugar (or stevia brown sugar)
1 tsp cinnamon
1 1/2 tbsp baking powder
1 tsp salt
2 cups white or whole wheat flour

Cook on a griddle and serve
