Vegetable Parma Rosa


I got this amazing recipe from my sister in law.  It’s totally adaptable.  I made it in a crockpot on low for 4 hours but it could be made cooking it on medium heat for 30 min. 

1  zucchini cut into strips
1 pepper cut into strips
6 sliced mushrooms
1 lb ground meat (optional)
2 large tomatoes diced or grape tomatoes cut in half
1/2 cup parmasean (optional)
1 cup heavy cream (optional)
2 large cans of tomatoe sauce
1 tbsp basil, oregano, garlic powder, sugar & onion powder

If you use meat precook it before adding it to the sauce

Serve on any pasta noodles. 

Chocolate Sour Cream Cake







Makes 24 cupcakes or a 2 layer cake
1/2 cup milk
3 tbsp butter
7 tbsp cocoa
Melt the above ingredients in the microwave
In a medium bowl cream:
1/2 cup butter
1 1/2 cup sugar
2 eggs
1 tsp vanilla
Then add melted mixture.  Next add the rest of the ingredients alternating with sour cream
1 1/3 cup flour
1/2 tsp salt
1 tsp baking soda
1 tsp baking powder
1 cup sour cream

Line cake pans with wax paper and spray with Pam then pour into 2 cake pans

Bake at 350 30-35  min cake 15-20 min cupcakes

Icing:
In a small pot combine:
1 cup sugar
1 tbsp corn starch
1 cup milk 
1/2 cup butter


Stir over medium heat until it thickens then remove from heat cover with wax paper and allow to cool. Cream 2 tbsp hard butter til fluffy with 4 tbsp cocoa then add melted mixture.  Rest for 5 min then refrigerate 30 min. Then ice cake. 




No bake Peanut butter cookies




For sugar free use powdered sweetener 1 1/4-1 1/2 cups and no salt!

Vietnamese Pho




Slice 2 chicken breast’s thin and cook with garlic, onion and Chinese 5 spice

In pot pour in 2 900 ml boxes of pho broth bring to a boil and add:
One pkg Vietnamese noodles
2 cooked chicken breasts
A large handful of bean sprouts 
Fresh chopped cilantro
Fresh chopped basil
2 cloves garlic
1 tbsp ginger
1 chopped jalapeƱo (optional)
Add lime wedges

Spiced Apple Muffins


Mix 2 eggs
1 tsp salt
2 apples peeled and chopped
2/3 cup melted butter
7 tsp baking powder
1 cup sugar
2 cups milk
Then add 4 cups flour

Put in muffin tins

Mix together:
4 tbsp brown sugar
1 tsp cinnamon
1 tsp nutmeg
Sprinkle on top 

Bake at 400 
30 min for giant muffins 
22 min for regular muffins
15 min for mini muffins

Cranberry Sauce




This cranberry sauce is absolutely amazing.  I grew up with my mom making it every thanksgiving.  I kept it in her writing on the card for this post.  In case it’s hard to read here is the ingredient list and instructions:
On medium heat bring to a boil:
1 lb cranberries
2 cups sugar
1/3 cup water.  
Once boiling reduce to a simmer and add:
1 cinnamon stick
1/2 tsp all spice
1/4 tsp nutmeg
After 7 min add orange zest and the juice of one orange.

Oriental Salad

1/2 cabbage sliced thin
2 grated carrots
1 cut up and cooked chicken breast
I pkg ichi ban
Optional ingredients:
Slivered almonds
Sliced mushrooms
Canned shrimp
Or replace the above ingredients with bagged coleslaw
Sauce:
1/2 cup vegetable oil
1/3 cup soy sauce
One pkg ichi ban seasoning
2 tbsp white vinegar
2 tbsp sugar
