Manicotti crepes




10 crepes from the crepe recipe:
2 cups flour
3 cups milk
1/2 cup butter
3 tbsp sugar
4 eggs
Pinch of salt

Mixture to cook for the insides:
1 10 oz pkg frozen spinach
1 chopped onion or 2 tbsp onion powder
1 clove garlic
1 lb ground meat
1/2 tsp salt
1/8 tsp pepper
1/4 cup parmasean 
Cook all the above ingredients together.  Add parmasean last.

Top with the following white sauce:
1/4 cup butter
1/4 cup flour
2 1/2 cups milk
1/2 tsp salt
1/8 tsp pepper
1/4 cup parmasean 

I make the white sauce in the pan I cooked the meat in.  Melt the butter first.  I shake the milk and flour together in a shaker then pour it in the pan and add the remaining ingredients. 

Place meat in crepes and wrap.  Place in a greased 9 by 13 pan. Pour white sauce on top then bake at 350 for 20 min. 



Chicken ramen


This ramen is super easy to throw together:
2 900 ml containers of ramen broth
2 grilled chicken breasts sliced thin
1 cup corn
3 green onions chopped (opp)
4 pkgs ramen noodles

Gingerdoodles








These are an amazing mix of a snickerdoodle and gingerbread.  

Mix together:
1 egg
1/4 cup molasses
1/2 cup sugar
3/4 cup brown sugar
3/4 cup melted butter
2 tsp vanilla

Then add dry ingredients:
1/8 tsp nutmeg
1/2 tsp salt
2 tsp baking soda
1 tbsp cornstarch 
1/4 tsp cloves
1 tsp ginger
2 tsp cinnamon
2 1/4 cups flour

Mix together bake tbsp sized cookie dough balls at 350 for 8-10 min. Makes 4 dozen cookies

Ham & cheese sliders

12 buns
12 slices of Ham
Mozzarella cheese

Homemade honey mustard:
1/2 cup mayo
1/8 cup melted honey
2 tbsp mustard

Poppy seed dressing
1/2 cup melted butter
1 tbsp poppy seeds
2 tbsp honey mustard
1/2 tsp Worcestershire sauce

Spread honey mustard on one side of bun and mayonnaise on the other.  Put cheese and ham in the bun.  Place 12 buns made in a lasagna dish or 9x13 dish. Pour poppy seed dressing on top. Cover with tinfoil and   Bake at 350 for 15 min.  Serve immediately







Honey mustard

1 cup mayo
1/4 cup melted honey
1/8 cup mustard

Mix together.  Can be stored in the fridge.

Crockpot buttery chicken & veggies





2-3 chicken breasts
4-5 carrots 
6-8 potatoes

Place chicken and veggies cut up in strips or wedges in the crockpot.  Mix the following and pour on top:
1/2 cup butter
2 tbsp garlic powder or 4 cloves minced garlic
1/2 tsp salt
1/4 tsp pepper
1 tsp thyme
1 tsp parsley

Cook on low for 7-8 hours 


Whole wheat Snickerdoodles


3 cups sugar
2 tsp vanilla
1 tsp lemon juice
1 cup softened butter
4 eggs
1 tsp baking soda
Mix together then add:
2 cups white flour
2 cups whole wheat flour
1/2 tsp salt
Mix roll into balls the roll in a mixture of:
3 tsp cinnamon and 4 tsp sugar

Bake at 350 for 10-12 min

Makes 6 dozen cookies

Beef & Barley Soup


1 lb stewing meat
2 tbsp onion powder or 1 onion diced small
2-4 large carrots cut up
2 celery sticks cup up
2 cups chopped spinach (optional)
2 tsp salt
2 tsp garlic powder
2 bay leaves
1 tsp dried thyme
1/2 tsp pepper
3/4 cup pearl barley
6 cups beef broth
1/4 cup soy sauce (optional)
2 tbsp balsamic vinegar 
1 tbsp parsley

Cook in crockpot for 6-8 hours on low.  It turns out amazing.

Bagels






I got this recipe from my Mom. The girls loved helping make the bagels. They learned it’s important to pinch them together really well to keep them in bagel shape. 

3 tbsp yeast
2 cups water
4 tbsp sugar
3 tsp salt
8 cups flour (if whole wheat do 6 cups whole wheat and 2 white)
4 eggs
4 tbsp canola oil

Dissolve yeast in hot water, stir in sugar let sit for 10 min.

Then mix in flour, eggs and oil. Knead for 10 min then rise until it doubles (about 45 min).

Shape into 30 bagels and let rise 20 min

Preheat oven to 375

Fill big pot with water and boil bagels for 4 min. 

Beat an egg with 1 tbsp water and brush the top of the bagels 

Bake 20 min

Chipotle mayo

We love this recipe with sweet potato fries!  It would also be good on hamburgers.
1 cup mayo
1/2 tsp chipotle seasoning
1/2 tsp garlic powder
2 tsp lime juice
1/4 tsp paprika
1/4 tsp pepper
1/4 tsp salt

Curry ketchup

I love this recipe for dipping sweet potato fries
1 cup ketchup
4 tsp curry powder
2 tsp paprika
2 tsp Worcestershire sauce
2 tsp honey
1 tsp chili powder
1 tsp water

Vegetable Parma Rosa


I got this amazing recipe from my sister in law.  It’s totally adaptable.  I made it in a crockpot on low for 4 hours but it could be made cooking it on medium heat for 30 min. 

1  zucchini cut into strips
1 pepper cut into strips
6 sliced mushrooms
1 lb ground meat (optional)
2 large tomatoes diced or grape tomatoes cut in half
1/2 cup parmasean (optional)
1 cup heavy cream (optional)
2 large cans of tomatoe sauce
1 tbsp basil, oregano, garlic powder, sugar & onion powder

If you use meat precook it before adding it to the sauce

Serve on any pasta noodles. 

Chocolate Sour Cream Cake







Makes 24 cupcakes or a 2 layer cake
1/2 cup milk
3 tbsp butter
7 tbsp cocoa
Melt the above ingredients in the microwave
In a medium bowl cream:
1/2 cup butter
1 1/2 cup sugar
2 eggs
1 tsp vanilla
Then add melted mixture.  Next add the rest of the ingredients alternating with sour cream
1 1/3 cup flour
1/2 tsp salt
1 tsp baking soda
1 tsp baking powder
1 cup sour cream

Line cake pans with wax paper and spray with Pam then pour into 2 cake pans

Bake at 350 30-35  min cake 15-20 min cupcakes

Icing:
In a small pot combine:
1 cup sugar
1 tbsp corn starch
1 cup milk 
1/2 cup butter


Stir over medium heat until it thickens then remove from heat cover with wax paper and allow to cool. Cream 2 tbsp hard butter til fluffy with 4 tbsp cocoa then add melted mixture.  Rest for 5 min then refrigerate 30 min. Then ice cake. 




No bake Peanut butter cookies




For sugar free use powdered sweetener 1 1/4-1 1/2 cups and no salt!

Vietnamese Pho




Slice 2 chicken breast’s thin and cook with garlic, onion and Chinese 5 spice

In pot pour in 2 900 ml boxes of pho broth bring to a boil and add:
One pkg Vietnamese noodles
2 cooked chicken breasts
A large handful of bean sprouts 
Fresh chopped cilantro
Fresh chopped basil
2 cloves garlic
1 tbsp ginger
1 chopped jalapeño (optional)
Add lime wedges

Spiced Apple Muffins


Mix 2 eggs
1 tsp salt
2 apples peeled and chopped
2/3 cup melted butter
7 tsp baking powder
1 cup sugar
2 cups milk
Then add 4 cups flour

Put in muffin tins

Mix together:
4 tbsp brown sugar
1 tsp cinnamon
1 tsp nutmeg
Sprinkle on top 

Bake at 400 
30 min for giant muffins 
22 min for regular muffins
15 min for mini muffins

Cranberry Sauce




This cranberry sauce is absolutely amazing.  I grew up with my mom making it every thanksgiving.  I kept it in her writing on the card for this post.  In case it’s hard to read here is the ingredient list and instructions:
On medium heat bring to a boil:
1 lb cranberries
2 cups sugar
1/3 cup water.  
Once boiling reduce to a simmer and add:
1 cinnamon stick
1/2 tsp all spice
1/4 tsp nutmeg
After 7 min add orange zest and the juice of one orange.

Oriental Salad

1/2 cabbage sliced thin
2 grated carrots
1 cut up and cooked chicken breast
I pkg ichi ban
Optional ingredients:
Slivered almonds
Sliced mushrooms
Canned shrimp
Or replace the above ingredients with bagged coleslaw
Sauce:
1/2 cup vegetable oil
1/3 cup soy sauce
One pkg ichi ban seasoning
2 tbsp white vinegar
2 tbsp sugar

Salmon cakes


2 cans drained salmon
1 cup bread crumbs
4 green onions chopped
1/2 cup mayo
2 eggs
4 tbsp dill
1/2 tsp black pepper

Mix ingredients together. Oil hands make patties and cook on a medium high pancake griddle or frying pan.  About 3 min per side

Red pepper mayo:
1 red pepper
6 tbsp mayo
1/4 tsp hot sauce
4 tbsp gherkins pickles or relish

Mix in a blender or food processor.

Shrimp & Chorizo Skewers




Make paste:
1 tbsp garlic powder or 2 garlic cloves minced
2 tsp kosher salt
2 tsp fennel or caraway seeds
2 tbsp chili powder
1/4 cup canola or grapeseed oil

2 lbs (20) large shrimp shelled
Chorizo sausage (5 small cooked) I could only find it precooked

Stir shrimp in paste with oil then put on skewers alternating with the sausage.  

The sausage is quite spicy but is delicious with the shrimp and seasoning. 

Grill on the BBQ 5 min rotating regularly

I served it with salad.  




Blueberry muffins


2 cups white sugar
3 eggs
1 1/2 cups veggie oil
1 cup milk
3 tsp vanilla
3 3/4 cups flour 
3 tsp baking powder
1 tsp salt
1 1/2 cup sour cream
3 cups blueberries
Bake at 350 for 30 min for regular muffins.

Apple Rhubarb Crumb Pie




Pie crust:
1/2 cup shortning
1 1/2 cups flour
1/2 tsp salt
1/2 cup soft butter

Mix together.  Flour counter and roller and roll it out and cut to size for pie crust. 

Filling:
5 cups thinly sliced apples
2 cups fresh or frozen rhubarb
1/2 cup sugar
3 tbsp flour
1/2 tsp cinnamon

Mix together and put in pie crust

Topping:
1/3 cup flour
1/4 cup sugar
1/4 cup quick oats
1/8 tsp salt
1/8 tsp cinnamon
2 tbsp melted butter

Mix together and pour on top

Bake at 375 for 30-40 min

Pickled beets




Wash beets with metal scour pad
Boil beets in giant pot (I used my canning pot) for 60 min
Place beets in a sink of cold water then use gloved hands to peel them. 
Start boiling water in the canning pot and start the canning lids in a pot of water on medium heat. Place jars in the oven at 200 to sterilize them. 
Chop up beets into bite sized pieces.  
Boil:
5 cups vinegar
5 cups water
5 cups sugar
Bring to a boil and reduce to medium heat. 

Use canning funnel and put the beets in the jar followed by the brine you just boiled.  Leave 1/4inch space from the top of the jar.  Seal with lid and rim then boil in the canner for 20 min. 

I canned 30 lbs of beets and made the brine twice.

No bake cookies



Bring 1/2 cup milk, 1/2 cup butter, 4 tbsp cocoa powder and 1 3/4 cups sugar to a boil on medium heat for 1 whole minute.  Remove from heat and add 3 1/2 cups oats,1/2 tsp salt, 1 tsp vanilla and 1/2 cup peanut butter and stir.  Spoon mixture onto wax paper and allow to cool 30 min.

Mexican Pizza


Dough: 
1 tbsp yeast
1 1/4 cups hot water
1 tbsp sugar

Allow to sit 10 min then add:

2 tbsp olive oil
3 cups flour
1 tsp salt

Allow to rise up to an hour for fluffy crust

Roll onto greased pizza pan with cornmeal sprinkled on top

Spread refried beans on pizza. I use 1 can. 

Cook 1 lb ground beef and spread on top of refried beans

Add jalapeños or chili’s if desired. 

Spread salsa on top to taste and sprinkle with cheese. 

Bake at 350 for 30 min


Canned peach jalapeño jam


Put jars in the oven at 200 to sterilize.
Boil pot of water and boil peaches for 1min then put in the sink full of cold water.  Once the peaches cool peal the peaches and dice them.  Dice jalapeños and blend in the food processor if desired.  Heat up jar lids on low heat. 

4 cups diced peaches
3 fresh jalapeños without seeds or 1/4 cup canned jalapeños
6 1/2 cups sugar
1/4 cup lemon juice
1-2 tbsp of butter
1 pkg certo

Bring peaches, jalapeños, lemon juice and sugar to a boil for 1 min then remove and add certo and butter stir and let sit 5 min before pouring into jars.   Use a wet cloth to clean rims then put the lids on the jars.  Allow to sit 24 hours to seal. 

I do a double batch each time.  1/2 25 lb box yields 4 batches. 


Poppy Seed Bread



3 eggs
2 cups sugar
1 1/2 cups milk
1 tbsp lemon juice
1 1/8 cups canola oil
1 1/2 tsp almond extract
1 1/2 tsp vanilla
3 cups flour
1 1/2 tsp salt
1 1/2 tsp baking powder
2 tbsp poppy seeds

Mix ingredients together first wet then dry.  Bake at 350 for 55 min. Makes 2 regular loafs or 4 mini loafs. We enjoy this without the glaze but here is the recipe for the glaze to drizzle on top once baked:


2/3 cups sugar
1/4 cup orange juice
1/2 tsp almond extract
1/2 tsp vanilla
1/4 cup butter

Heat over medium heat and pour on top of baked loaf
