3 cheese Chicken penne pasta bake


Boil
750 grams penne or rotini pasta
Near the end of the boil add 2 cups cut up spinach

In a pan or on a grill cook 2 chicken breasts I season them with garlic and salt.

Pasta sauce:
680 grams sauce or crushed tomatoes
1 tbsp basil
1 tbsp oregano
1 tbsp garlic powder
1 tbsp onion powder
1 tsp chili powder

You can also use whatever sauce you have on hand.  If I’m not using left over sauce I just mix the ingredients and don’t even precook the sauce.  

Drain the pasta/spinach mixture then pour the sauce in the pot.  Add 1/2 cup cream cheese then stir in pasta and chicken.   Put in an 9x13 pan and sprinkle with parmasean and mozzarella cheese.  


Bake at 375 for 20 min


Oatmeal pancakes

These pancakes are diabetes friendly.  Pancakes have been my kryptonite recently and these ones didn’t peak my numbers. 

First warm:
1 1/2 cups water
1 1/2 cups milk 
For 3 min in the microwave then add:
2 cups quick oatmeal to the mixture and allow to sit. 

Mix:
6 eggs
2 tsp vanilla
1/4 cup melted butter

Then add oat mixture and:
6 tbsp brown sugar (or stevia brown sugar)
1 tsp cinnamon
1 1/2 tbsp baking powder
1 tsp salt
2 cups white or whole wheat flour

Cook on a griddle and serve
