Italian Grissini sticks


2 1/2 tsp yeast
1 cup lukewarm water
1 tsp honey
3 1/2-4 cups white flour
2 tsp sea salt
1 tsp rosemary
1 tsp garlic powder
1 tsp oregano
1/4 cup olive oil

Can top with sesame seeds or course sea salt or parmasean cheese.

Dissolve the yeast, water and honey for 5 minutes then mix all other ingredients in your mixer. Cover the dough with Saran Wrap and let rise for 1 hour.  Preheat oven to 400. Cut dough into 30 pieces.  Roll the dough into thin pieces and bake 10-12 minutes.  The longer you bake them the crispier they become.  The grissini sticks should snap when you break them in half. 



Indian oven chicken






3-4 chicken breasts
Place in a bowl with 
3 tbsp butter
1 tsp curry powder
1/2 tsp red pepper flakes

Stir together then dip in a bowl filled with:
1/3 cup coconut
1/4 cup cornmeal
1/2 cup chopped peanuts
1 tsp paprika
Pinch salt and pepper

Bake at 375 for 15 min and serve with sauce
1 1/2 cups plain yogurt 
2 tbsp chopped fresh mint 


Cheese ball

This cheese ball is so delicious 

1 lb (16 oz) cream cheese
1 cup grated cheddar cheese
1/4 cup chopped green onions
1/2 cup cooked bacon
1 pkg ranch mix (1 oz)

Mix together in a bowl and wrap with Saran Wrap.  Refrigerate for at least 1 hour and serve with crackers.

Cake brownies


1 1/2 cups butter
3 cups sugar
6 eggs
4 tbsp cocoa
2 1/4 cups flour

Mix and pour on greased cookie sheet.  Bake at 350 for 25 min.

Icing:
1/2 cup butter
2 cups icing sugar 
1 tbsp cocoa
Dash of milk and vanilla


Turkey a la king with popovers






Turkey a la king:
4 cups chopped up cooked turkey or chicken 
3 large sliced carrots 
2 cups peas, broccoli or beans 
Cook on medium heat add:
1/4 cup butter 
Shake up 2 cups chicken broth with 1/2 cup flour
1 1/2 cups milk
1 tsp salt
1 tsp garlic powder
1/4 tsp Pepper


Cook on low til everything thickens. 

Popovers:

1 1/2 cups milk warmed 2 min in microwave
3 eggs warmed in the milk
1 1/2 cup flour
1 tsp salt

Mix together to form a runny batter

Melt butter in 12 muffin tins then add batter and bake at 425 for 22 min.

Serve turkey a la king on top of popovers.  

Everyone in our family loves this meal!  It would taste great as a filling in a pot pie.

Pineapple chicken



In a slow cooker on low for 6 hours place:
3 frozen chicken breasts
1 2 cup jar of salsa (mango, verde, regular)
1/2 cup milk or cream
1 500 ml can of pineapple 
1/4 tsp coriander
1/2 tsp paprika
1 tsp cumin
1/2 tsp salt

Serve on rice or in a tortilla with lettuce and sour cream

Focaccia Bread






Ingredients-
1 1/3 cup warm water
2 1/4 tsp yeast
2 tbsp sugar
3 3/4 cups flour
2 tsp kosher salt
1/4 cup olive oil plus 1/4 cup for pan and on top of dough while rising and baking
Onions browned in butter or apple juice (optional)
1 tbsp rosemary in dough (add more on top)
1 tbsp garlic powder in dough 

Pour water, yeast and sugar in mixer and let sit for 10-15 min.  Then add other ingredients and mix for 5 min.  Cover bowl with olive oil and put dough inside.  Let rise 1.5 hours then spread olive oil on pizza sheet.  Then add dough and roll out. Press holes in dough down to the pan then top with oil, sea salt and rosemary.  Bake at 400 for 20 min.

Banana muffins


1 cup butter
2 cups sugar
4 eggs
4 cups flour
1 tsp baking soda
6 bananas


Bake at 350 for 20 min regular muffins
30 min large muffins
1 hour bread


Pumpkin cookies



2 1/2 cups flour white or whole wheat
1 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp cloves
1/2 tsp salt
1/2 cup butter
1 1/2 cups sugar or Splenda 
2 cups pumpkin purée ( I cut our pumpkin in 1/2 and baked it at 350 for 1 hour then scraped out the pumpkin and mixed it in the food processor)
1 egg
1 tsp vanilla extract

Bake at 350 for 10 minutes 

Pumpkin muffins




This is my mom’s recipe and it is awesome!
3 cups sugar
4 eggs 
1 cup oil.
 Mix then add:
3 1/3 cup flour
1/2 tsp baking powder
2 tsp baking soda
1 tsp salt
1/2 tsp cinnamon 
1 tsp cloves
1 tsp nutmeg
2 cups pumpkin

For large muffins bake at 350 for 25 min for regular sized 350 for 22 min

Oriental cabbage salad




1 medium cabbage shredded or 1 bag coleslaw
2 tbsp sesame seeds optional
1 pkg bean sprouts optional
2 cups sliced mushrooms optional
2 green onions chopped
1/2 cup sunflower seeds optional
2 pkg ichi ban noodles
2 cooked chicken breasts

Dressing
Ichi ban soup base
1/2 tsp pepper
1/4 cup olive oil
4 tbsp soy sauce
3 tbsp vinegar
1 tbsp sugar


Puffed wheat squares




Melt 1/2 cup butter in a pot then add:
1/2 cup corn syrup
2 tsp vanilla
1 cup brown sugar
2 tbsp cocoa powder
Bring to a boil for 1 minute of medium heat

Measure 8 cups of puffed wheat into a large bowl then add boiled mixture and stir throughly.  

Put in a greased 9x13 pan press down firmly.  Let cool completely before cutting. 

Mexican Crockpot Chicken


2-3 chicken breasts
1 large can chopped tomatoes
1 can pinto or black beans drained
1 small can green chili’s
1 tsp cumin
1 tbsp oregano
1 tbsp chili powder
1 tsp garlic powder
1 tsp salt

Cook in crockpot on low for 6 hours 

Serve on rice or with rice and sour cream in tortillas

Mango Salsa


I made this salsa earlier this year and it is amazing.  It is my favorite salsa ever and I will be making it year after year.  

Ingredients:
8 diced mangos
1 red onion finely diced
2 seeded red peppers
2 tbsp chopped cilantro
1/2 tsp red pepper flakes
2 tsp ginger
2 garlic cloves minced
1 cup brown sugar
1 1/4 cups white vinegar
1/2 cup water

I like doubling this batch. 

Cook all ingredients over high stirring until brought to a boil. Reduce to simmer for 5 min.  You can refrigerate and eat it fresh or can it.  

Fill jars to 1/2 inch from the top with a slotted spoon.  Add liquid leaving the 1/2 inch head space. 

Process for 15 minutes in the canner

Baked Corn dogs


Preheat oven to 400

Ingredients:
1 cup white flour
1 cup cornmeal
1 tsp baking powder
1/2 tsp salt
1 tsp mustard
1/4 cup butter
1/2 cup milk
1/4 cup honey

Stir all ingredients except milk and honey.  Then add milk and honey and stir with a wooden spoon.  It should have a dough like consistency.  Add more flour and or cornmeal if needed.  Divide into 12 parts then roll out on a floured surface.  Wrap each hot dog with the dough and bake at 400 for 15-20 min.  Serve with mustard and ketchup for dipping.  You can put these corn dogs on sticks if you desire.  I prefer without.

Pork Lettuce Wraps


I made this with romaine the first time and calledthem lettuce boats.  The kids loved them especially the chow menu noodles.

Cook 1 pkg 1-2 lbs ground pork with:
2 tbsp onion powder or 1 diced onion
2 tsp garlic powder or 2 finely chopped garlic cloves
2 tbsp oyster sauce can use fish sauce in a pinch
2 tbsp soy sauce
1/2 bunch chopped green onions (opp)
1 can slivered water chestnuts
When almost done cooking add a few handfuls of chow mein noodles. 

Wrap in iceberg lettuce.

Chicken Cesar Salad Wraps




3 chicken breasts cooked and sliced into strips we like ours with BBQ sauce
Cesar salad dressing
Lettuce
1 giant tomato sliced
5 slices of bread turned into croutons (see crouton recipe)
Tortillas

Spread 2 tbsp of Cesar salad dressing on a tortilla then add a big piece of lettuce.  On the lettuce add tomatoes, chicken and croutons then wrap the tortillas.  You can add parmasean cheese if you want. This recipe makes 6.

Cafe Rio








Pulled Pork:
I just made my regular pulled pork in the crockpot with a container of BBQ sauce paprika and garlic powder then used the left overs and added 1/4 cup brown sugar and reheated it on low heat.

Cilantro Rice:
In a pot on high cook:
3 cups white rice
6 cups water
1 can diced green chili’s
2 tsp chicken bouillon
2 tbsp butter

Once boiling reduce to low heat for 10 min then add one handful fresh cilantro and 1/2 a lime squeezed. 

Cafe Rio dressing:
1 pkg dry ranch dressing
1 cup milk
1 tbsp vinegar
1 cup mayo
2 tomatillos
1 clove minced garlic
1/2 bunch cilantro
1/2 tsp lime juice
1 jalapeño

Mix together in food processor and refrigerate until used. 

I serve all of this on an open tortilla then placing rice on top followed by pork, lettuce, tomatoe, tomatillo, salsa and dressing on top.  My family loves this!

Pulled pork & Pulled pork pizza


For pulled pork I use 
1 bottle 425 ml bulls eye barbecue sauce
1 tsp paprika
1 tbsp garlic
1 tsp salt
2 tbsp onion flakes or 1/2 a cut up onion
5 lbs pork loins 
(Add some fennel and rosemary to taste) optional
Sometimes I will add a can of Dr Pepper if I have some. 

I put all that in a crockpot for 8 hours on low.

For pulled pork Pizza I make it on Greek pitas or use any bread recipe for the crust then add pulled pork with cilantro on top and bake it for 25 min on a bread crust or 10 min on a pita.  Top with garlic aioli sauce. 

Pani Popo

Mix one can coconut milk with 1/2 cup sugar 2 tsp vanilla.

Next time I will try this with coconut milk and a can of condensed milk. 


Make bread dough from Mom’s bread recipe

1 cup plus 2 tbsp hot water
1 tbsp yeast2 tbsp honey

1 egg
1 tsp salt
3 cups flour
 
Form into balls and let rise until they double then coat in coconut milk mixture. 

Bake at 350 for 20 min



We prefer these made like cinnamon buns.  We spread coconut and sugar on the inside and make them in spirals pouring coconut milk on top. 

Mom’s Bread Recipe

1 tbsp yeast
2 tbsp warmed honey 
2 tbsp warmed butter
1 warmed egg (sit in hot water)
1 cup plus 1 tbsp hot water
3 cups flour (I prefer 1 white 2 WW)
1/2 tsp salt

Put yeast and hot water in Bosch or bowl until the yeast dissolves then add warmed ingredients.  Mix for 5 min with flour and salt.  Let rise until it doubles.  When I make bread I triple this recipe.  Bake bread in pan for 20-30 min at 350  20 works best with my oven.

Garlic butter biscuits




Knead together:
1/2 cup cold butter.  I cut it real small and microwaved it for 20 seconds because I keep my butter in the fridge. 
2 cups flour
1 tsp salt
1 tsp sugar
1 tsp baking powder
2 tsp garlic powder
3/4 cup milk

Knead all together then roll out about 1/2 inch thick.  I cut the dough into circles with a cup.

Bake at 425 for 8 min.  When hot brush with:
1/8 cup melted butter 1 tsp garlic powder

This recipe makes 12.  I would double it next time.

Won Ton Soup




Wontons
In a food processor blend:
8-10 shiitake mushrooms
4 green onions
1/2 inch peeled ginger
2 peeled garlic cloves 
1 egg yolk
1 tbsp soy sauce
2 tsp sesame oil
1 tsp rice wine vinegar
1/2 tsp chili sauce (optional)
1/2 tsp salt
1/4 tsp pepper
Blend then add 2 lbs ground pork
Spoon into 42 wonton wrappers fold in a triangle and seal with water on a pastry brush.  Then attach corners together with water.  

Soup:
2 tsp sesame oil
2 medium carrots sliced
2-3 tsp fresh grated ginger
3 garlic cloves minced
1/4 tsp red pepper flakes
9 cups chicken broth
2 tbsp soy sauce
1 tbsp rice wine vinegar 
1 tbsp brown sugar
1 lb shrimp (optional)
Sliced mushrooms
Snow peas
4 heads Bok choy
Add whatever veggies you desire

Don’t put the won tons in the soup until 5 minutes before you serve the soup.  I boiled the soup on high for 10 min then added the won tons. 

Left over won tons can be frozen separately then bagged.  We deep fried the extras but they were most delicious in the soup.
