Peanut butter chocolate chip cookies

1 cup butter
1 cup sugar
1 cup peanut butter
2 large eggs
1 tsp vanilla
1/2 tsp salt
1 tsp baking soda
2 1/2 cups flour 

Mix and bake at 350 for 10 min

Vietnamese pizza

So I created this pizza today modeling one I've had at a restaurant before.  It was a guessing game but it turned out delicious!

Dough:
11/4 cup hot water
1/2 tbsp yeast
2 tbsp oil
3 cups flour
1/4 tsp salt

Spray pizza stone with oil and cornmeal and cook crust for 12 min on the bottom rack at 425.  All toppings get put in after the crust is cooked.

Toppings:
Cooked meat
I used ground duck which I seasoned with cayenne pepper, ginger, garlic powder, salt and Chinese 5 spice
Fresh cilantro
Grated carrots
Grated cucumber
Cut up green onion
Hoisin sauce to taste

Zucchini muffins

1 cup sugar
1 cup brown sugar
3 eggs
1 cup oil or 1/2 cup oil 1/2 cup apple sauce 
2 cups grated zucchini 
1 tsp vanilla

Mix above ingredients then add the following while still mixing:

1 tsp salt
3 cups WW flour
1/4 tsp baking powder
3 tsp baking soda
3 tsp cinnamon 

For large muffins bake at 350 for 25 min
For mini muffins bake at 350 for 15 min

Duck jerky

Duck jerky is delicious.  The Mr and I are just delving into cooking duck.  We found this awesome recipe for jerky on honest-food.net/2012/02/29/duck-or-goose-jerky/ and tailored it to us.

Cut meat into 1/4 inch thick strips and soak 24-48 hours in the following mixture:

3 pounds duck
2 cups water
2 tbsps salt
1/4 cup Worcestershire sauce
1 tsp garlic powder
1 tsp thyme
1 tsp cayenne flakes
3 tbsp brown sugar

After soaking dry with paper towel and put on a wire rack over a cookie sheet and bake on your lowest setting for 8 hours and enjoy.

Canned peaches

Canning season is upon us.  Today my beautiful fiery red head helped me can peaches.  I got the hot water going for boiling the jars.  I put the empty jars in my oven at 200 to keep them warm.  I got a pot of water on low with the lids in them and got another pot of water boiling to put the peaches in.  I then filled up the kitchen sink with cold water.
After all that prep I boiled the peaches for 30 seconds to 1 min then dumped them in the cold sink water.  My beautiful helper pealed the peaches and then I sliced them.  Once I had a bunch sliced I got my tea kettle going with hot water and took some jars out of the oven and filled them with peaches, less than 1/4 cup sugar and boiling water.  Then I dried off the rims of the jars and put the lids on.  Then boiled the jars in a hot water bath in my canner for 30 min.

Butterscotch dumplings

Dumpling:
2 cups flour
4 tsp baking powder
1tsp salt
Cut in 1/3 cup butter and 3/4 cup milk form into balls and place in greased 9x13 pan

Sauce:
4 cups brown sugar
4 cups boiling water
Pour over dumplings in pan 
Cook at 450 for 20 min
Serve with vanilla ice cream

Broccoli pockets

4-5 cups broccoli 
1/2 cup grated cheddar cheese
1/8 cup parmasean cheese
1/2 cup precooked bacon cut up or real bacon bits
1/4 cup ranch or Caesar dressing

Cook broccoli then mix with other ingredients

Dough:
2 1/2 cups hot water
2 tbsp yeast
3 tbsp sugar
3 tbsp extra virgin olive oil
6 cups flour 

Let yeast sit in hot water then add other ingredients and mix.  Roll out dough and add broccoli mixture.  Use a fork dipped in water to seal edges and poke a few times on top.  

Bake at 350 for 20 min
