Spaghetti squash
Cut squash in half and spread with olive oil, salt and pepper. Bake face down on a cookie sheet at 400 for 30 minute. Shred with a fork and mix with some butter and salt to taste.

Cheesy Instant pot chicken
3 chicken breasts
1/2 cup chicken broth
1 tsp basil
1 tsp oregano
1/2 tsp thyme
1 tsp garlic powder
2 tsp garlic powder
1 tbsp parsley
2 tbsp ranch powder (opp)
Add all those ingredients to the instant pot then set to pressure cook and 15 minutes. Allow to sit 10 minutes until it naturally releases the steam.
Pull chicken out and shred it.
Meanwhile add the following to the instant pot:
1 cup cheddar cheese
1/4 cup parmasean cheese
1/2 cup cream cheese
Whisk together then add the chicken back in.
This is delicious served on a bun or on pasta.

Tre Leches Cake
Cake:
1 cup flour
1 1/2 tsp baking powder
1/4 tsp salt
5 large eggs
1 cup sugar
1/3 cup milk
1 tsp vanilla
Milk mixture:
1 can evaporated milk
1 can sweetened condensed milk
1/4 cup milk
Whipped topping:
2 cups whipping cream
3 tbsp icing sugar
1/2 tsp vanilla
sprinkle with cinnamon
Make cake and pour into a sprayed 9 by 13 pan. Bake for 25-35 minutes.
Combine milk mixture in a bowl and once the cake is cool poke holes with a fork and then pour milk mixture on top.
Refrigerate at least 1 hour to allow the milk mixture to absorb.
Make whipped topping by mixing ingredients with an electric mixer until stiff peaks form. Spread on top of the cake and serve or you can refrigerate for up to 3 days.
This cake can also be frozen and thawed.

Rhubarb crumb bars
Make this dessert in an 8 by 8 pan in 3 layers. Spray the pan first then pour in each layer. Preheat the oven to 350
Layer 1
Mix together then pour in pan:
1 cup white flour
1 cup icing sugar
1/2 tsp baking powder
1/4 tsp salt
1/2 cup soft margarine or butter
2 eggs
1 tsp vanilla
Layer 2
Mix together then pour in pan:
2 cups chopped rhubarb
1/4 cup flour
1 tbsp brown sugar
Layer 3
Mix with a fork then pour in the pan:
1/4 cup melted butter
1 cup flour
1/2 cup brown sugar
Bake 40-50 min and cut into 16 bars

Dill dip
Ingredients
- 1 Cup Sour Cream
- 1 Cup Mayonnaise
- 2 Tablespoons Dried Dill Weed
- 2 Tablespoons Dried Minced Onion
- 1 Tablespoon Dried Parsley
- 1 Teaspoon Garlic Powder
- 1/8 Teaspoon Salt
Baked sweet potato fritters
Ingredients
- Non-stick cooking spray
- 1 pound sweet potatoes (1 large, 2 medium or 3 small sweet potatoes)
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/3 cup all purpose-flour
- 2 scallions, thinly sliced
- 1 large egg, lightly beaten
- Chopped parsley for serving
- Sour cream for serving
Instructions
- Preheat the oven to 400 degrees F. Grease a baking sheet with non-stick cooking spray.
- Peel the sweet potatoes. Grate them using the large holes of a box grater or a food processor fitted with the grating disc. Gently squeeze the shredded potatoes with a towel to remove excess moisture.
- Combine the potatoes, cumin, chili powder, garlic powder, onion powder, kosher salt, black pepper, flour and scallions in a large bowl.
- Stir in the egg.
- Portion out the fritter batter by the 1/4-cup-full. Form them into patties, but do not pack them too tight. They should just be able to hold their shape. Space them 2-3 inches apart on the pan.
- Bake the fritters for 25-30 minutes until they are browned on both sides, flipping them over just over halfway through baking.
- Garnish them with chopped parsley and serve with sour cream if wanted.
Notes
Recipe makes 8-10 fritters.

Spicy BBQed pork chops
• 2 Tablespoons smoked paprika
• 1 Tablespoon kosher salt
• 1 Tablespoon black pepper
• 1 Tablespoon brown sugar
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• 1/2 teaspoon ground mustard
• 1/2 teaspoon cayenne pepper
Instead smoked paprika I put in a teaspoon of instant smoke and about a tablespoon of honey mustard instead of normal mustard.
Marinate and BBQ til cooked through

Baked KFC style chicken
Use a whole chicken and cut it into parts. Dip each section in an egg white wash then coat in the following:
1 tsp paprika
2 tsp onion powder
1 tsp chili powder
1 tsp black pepper
1/2 tsp sage
1/2 tsp garlic powder
1/2 tsp allspice
1/2 tsp oregano
1/2 tsp basil
1cup flour
1 tbsp brown sugar
1 tbsp salt
Spray a 9 by 11 pan and bake the chicken at 450 for 40 minutes flipping 1/2 way through.
Tear away dinner rolls
1 tbsp yeast
1 cup warm milk
1/2 cup water
3 tbsp butter
1 tsp salt
3 cups flour
Mix for 10 min
1st rise 1 hour
Form into 12 buns then rise 30 min
Bake at 350 for 22 min preheat while the buns are in the oven.

Veggie dip
Mix together:
1 cup sour cream
1 cup mayonnaise
1 tbsp parsley

1 tsp garlic powder
1 tsp onion powder

No bake protein bars
1 cup milk
1/3 cup chia seeds
1/2 cup raisins
2 cups whey powder
2 cups peanut butter
3/4 cup honey
4 cups oatmeal
2 tsp cinnamon
Mix the milk, PB, & honey on low heat until throughly mixed then remove from heat and add in other ingredients.
Press into a greased 9 x 11 container and allow to cool completely before cutting.

Pasta salad
6-8 cups dry pasta noodles
2 cups frozen peas
Bring a pot of water to a boil on high then boil the noodles according to pkg directions. Add the peas in the last few minutes.
Prepare the dressing in a large bowl. When the noodles and peas are cooked mix them into the large bowl with the dressing. Eat warm or refrigerate and serve cold.
Dressing
1/2 cup chopped cooked bacon
1/4 cup parmesan cheese
3/4 cup mayo
2 tbsp olive oil
2 tbsp apple cider vinegar
2 tsp sugar
1 tsp salt
1 tsp garlic powder
1 tsp onion powder
