Fajita stuffed peppers

Ingredients:
3 cups cooked brown rice
1 can black beans
1 can corn
350 ml tomato sauce or diced tomatoes
Ground chicken optional 
1 tbsp chili powder
1 tsp cumin
1/2 tsp paprika
3 tbsp cilantro
2 tbsp garlic powder
2 tbsp onion powder or 1 onion chopped
3 tbsp lime juice
1 tbsp hot pepper flakes or 1 can chilis 

6 peppers
1/2 cup grated cheese

Mix ingredients in a frying pan and heat then spoon into halves of peppers in any color.  This recipe will fill about 6 peppers.  Sprinkle cheese on top and bake at 350 for 20 minutes.

Fettuccine Alfredo

This dish is super easy and yummy.

4-5 cups pasta noodles
1/2 cup cream cheese
250 ml chicken broth
1/8 cup parmasean cheese 
3 tbsp flour
2 chicken breasts cooked and cubed or shrimp

Boil the noodles while making the sauce in a pan.  Mix flour with broth and pour in pan, add other ingredients and cook for a few minutes.  Pour on noodles and add parsley to taste.

Mandarin orange chicken salad

14 cups spinach
2 cooked chicken breasts cubed (I cook mine with a little bit of BBQ sauce)
1 can of mandarin orange slices
1/2 cup crumbled feta cheese
10 sliced strawberries (optional)
Balsamic vinegrette dressing

Mix everything together in a lg salad bowl and serve.

German oven pancakes

Preheat the oven to 425 and put 1/4 cup butter in a 9x13 pan and melt.  Then in a blender mix:
6 eggs
1 cup milk
1/2 tsp salt
1 cup flour

Remove pan with melted butter from the oven and sprinkle 2 tbsp of icing sugar on the bottom of the pan.  Pour in the ingredients from the blender and cook for 20 min at 425.
