Cheesy Instant pot chicken

3 chicken breasts
1/2 cup chicken broth
1 tsp basil
1 tsp oregano
1/2 tsp thyme
1 tsp garlic powder
2 tsp garlic powder
1 tbsp parsley
2 tbsp ranch powder (opp)

Add all those ingredients to the instant pot then set to pressure cook and 15 minutes.  Allow to sit 10 minutes until it naturally releases the steam.  

Pull chicken out and shred it.  

Meanwhile add the following to the instant pot:

1 cup cheddar cheese
1/4 cup parmasean cheese
1/2 cup cream cheese

Whisk together then add the chicken back in.  

This is delicious served on a bun or on pasta.

White chicken chili


2 tbsp onion powder or 1 diced onion
2 tbsp lime juice
2 cans (500 ml) white kidney beans
2 cloves of garlic or 2 tsp garlic powder
2 tsp cumin
1 small can (4 oz) green chilis
3 cups chicken broth (I shook it up with 1/8 cup flour)
2 chicken breasts 

Put all the ingredients in a slow cooker.  I put the chicken in frozen and broke it apart right before serving.  

Keep in the slow cooker on low for 6-8 hours

Ham bone soup

This is delicious with left over ham bone.

Put the following in your slow cooker:

Hambone 
1/2 cup diced onion
3 cloves garlic
6 cups water
2 bay leaves
2 cups diced ham
3-4 potatoes
1 cup milk or cream
4 tbsp cornstarch
3 carrots peeled and chopped
3 celery sticks chopped

Slow cook for 6-8 hours

Meat loaf and potatoes


Instant Pot Meat Loaf & Potatoes

Meat loaf:
Mix:
1 lb ground beef
1 tsp garlic powder or 1 clove crushed garlic
2 tsp onion powder or 1/4 cup chopped onion
2 tsp worchestershire sauce
2 tsp Montréal chicken seasoning or seasoning of choice
1/3 cup milk
1 egg
1 slice bread torn into small pieces

Mix and form into a ball.  Place in a tin foil boat. 

Mix sauce and pour on top of the meat loaf. 

Sauce:
1/2 cup ketchup
1 tbsp mustard
1/4 cup brown sugar

Cut 6-8 potatoes into bite sized pieces and put in the bottom of the instant pot.  Add 2 cups beef broth.  

Place meat loaf boat on top of the potatoes on the instant pot stand (if you have one). 

Push pressure cook and cook for 25 minutes.  Remember your instant pot will take about 20 minutes to get to the proper pressure. When it is done hit quick release to let out the steam.
