I warmed my jars in my oven. My lids in a pot of water set to low heat and got the water boiling in my canner. I quartered the apples and put them in my juicer until soft. I drained the juice and froze it in ice cream buckets. We ran the mushed up apples through the food mill then once I filled 1/2 my pot (10-12 cups) I added 1 cup sugar and a sprinkle of cinnamon and warmed it on medium heat then filled my 7 500 ml jars and processed them in a water bath for 20 minutes.

Zucchini relish
Soak
20 cups grated zucchini
6 cups grated onions
8 red bell peppers (I used yellow, orange & red)
10 tbsp salt
I ran all the ingredients through the grater in my food processor and then soaked them in my fridge for 6 hours in my big popcorn bowl.
Then prepare the following:
6 cups sugar
2 tbsp corn starch
2 tsp tumeric
6 cups vinegar
2 tbsp mustard
2 tsp pepper
2 tsp celery seed
Combine all ingredients and boil for 30 minutes then boil in a hot water bath for 15 minutes.
This recipe makes 12 500ml jars of relish.

Balsamic Chicken
3 chicken breasts
1/2 cup balsamic vinegar
2 cloves garlic (2 tsp powder)
Salt and pepper to taste
2 tbsp butter
6 tbsp honey
I melted the butter and honey together then mixed all the ingredients sliced up the chicken and let it marinate for 30 min. Then I poured it all in my wok and let it cook until done. I served this with rice. It would be delicious as a stir fry with vegetables as well.
Butterhorns
2 cups scalded and then cooled milk
1 cup butter
1/2 cup sugar
2 tsp salt
1/2 cup water with 2 tbsp yeast and 2 tsp sugar
3 beaten eggs
3 1/2 cups flour
Only make 1 batch. 1 batch makes 4 dozen.
Mix ingredients together then add 3 1/2 more cups flour and mix. Allow to rise and when doubled form into balls and place on a greased pan. Bake at 375 for 15-20 minutes. Allow to cool and then ice.
Icing recipe:
1 cup butter with a little milk
1 tsp vanilla
4-5 cups icing sugar

These little guys turned out super delicious! Use the cornbread recipe found earlier on the blog then spoon into a mini muffin pan. Slice up some defrosted hotdogs and put one piece in each mini muffin. Bake at 375 for 13 min. I used 6 large hotdogs.
